Ninja Burger is ready to launch in Newcastle city centre this Thursday and they have chosen super cool, award-winning late night bar No28 as their first host.
Their passion in creating the most delicious burgers the city has seen starts with the main ingredients – the beef is prepared by Charlotte’s Butchery, Gosforth, winners of The Great Taste Awards in 2013. They use the Heston Blumenthal choice of a perfect burger patty, which is about 50% shortrib, 25% chuck and 25% brisket.
Ninja Burger then applies their own secret seasoning before cooking “sous vide” translated as “under pressure.” This method was first popularised by Michelin starred chef Thomas Keller. The burgers are placed in a water bath for 95 hours or more at a regulated temperature of 55.6 degrees. This ensures each burger is properly cooked without overcooking the outside and retaining moisture. The chicken burgers are also just as succulent, since they have been brined for extra juiciness, marinated in buttermilk and fried in popcorn crust. For the vegetarians there is also a Panko crumbed halloumi burger with puy lentils or a homemade falafel burger.
Each individual Ninja Burger comes with a butter enriched brioche bun from the Geordie bakers who are based in Kingston Park, they are baked overnight and delivered fresh to the kitchen door early morning.
Diners can order additional Dirty Fries for £5 loaded with meatball chilli and mozzarella or for £4 Dutch War Chips (patat Orlog) with satay sauce, fritesaus and diced onion.
If there is any room left for dessert, for £4 guests can enjoy either a Raspberry sorbet with berries and a blackcurrant cocktail shooter, Sticky toffee pudding with a mini salted caramel flip and Vanilla rice pudding in a filo cup with passion fruit coolis and a coconut rum Russian shooter. There is also a local ice cream sundae with a shot of amaretto or café patron poured over.
